Penang Hokkien Mee


In May 2009, I made Penang Hokkien Mee and invited some friends over to eat. I have not made it since then but thought I should share the recipe with you so that you could also attempt to make it at home. It's a really delicious Malaysian dish - prawn stock with noodles, vegetables, thinly sliced fish cake, slices of pork belly, sambal prawns, hard boiled eggs and crispy roast pork. Here is the recipe (probably serves 8-10):

Stock

  • 1 slab of pork belly (remove the rind, please)
  • A few large pork bones
  • 1kg of prawn heads, shells (whole prawns sauteed, heads & shells for stock, prawns aside for later)
  • 200g of dried anchovies
  • Fill a large pot with water, add all the ingredients and bring to a boil for 45mins
  • Strain the stock, discard prawn head/shells, pork bones and dried anchovies
  • Return the pork belly slab into the stock and boil again until the pork belly is tender (about 2hours)
  • Add some chilly oil, salt and sugar to taste (the stock should be a little sweet)


Sambal
  • 1 garlic bulb
  • A small piece of garlic
  • 8 eschallots
  • 10 fresh red chillies
  • 10 dried chillies, soaked in hot water until soft and drained
  • Blend all the ingredients above into a paste
  • Heat pan, add oil and saute the paste
  • Add 1tbs of shrimp paste/belacan paste
  • Add salt and sugar to taste


Noodles, Vegetables and Miscellaneous
  • Blanch 5 cups of bean sprouts, 2 cups of kangkung/morning glory (cut into 1 inch length)
  • Blanch 1kg chinese vermicelli and 1kg hokkien noodles (yellow noodles)
  • Prepare 5 hard boiled eggs
  • 3 fried fish cakes, thinly sliced
  • Store-bought fried crispy shallots
  • Store-bought roast pork (or you can make your own roast pork) 
  • Remove pork belly from the stock and thinly slice it
Noodles, Vegetables, and Misc all ready

Assemble the dish
  • Place a handful of vermicelli and hokkien noodles into a bowl
  • Then, add some bean sprouts and kangkung/morning glory
  • Top the vegetables with a few pieces of prawns, sliced pork belly, sliced fried fish cake 
  • Pour the piping hot stock into the bowl, covering all the noodles
  • Then add roast pork, hard boiled egg, sambal and fried shallots
  • Serve
Penang Hokkien Mee partaayyy!!!

Delicious! Writing this is making me crave for the noodles. I might make it again...will you try it too? :)

I love har mee! its one of my favourite dish to order in maylasian restaurant. looking at your prep pic.. I was so scare and turn away haha becoz looks like heaps of work involve. good job!

haha it is a lot of work, which is why I havent made the dish again since 2009! LOL but because I can make it, i tend to get very critical when i order this dish in a malaysian restaurant..and so help all my frens who were at my noodle partay cuz they always say Lay's prawn mee is the best! LOL!!!!!

oh I meant...they HAVE TO SAY mine's the best when we eat together...LOL...a bunch of jokers they are! hahaha
